Oct 29, 2024Have you seen or had acorn squash before? These squashes look like huge acorns with their round plump globular shapes and even grooved ridges. They are often sold in bins at the grocery store with a dark green appearance, though they may appear in other colors, such as orange and white! If you’re new to the plant-based world, chances are you may not have had a chance yet to cook with this lesser-known squash in your kitchen, or know much about it. It may even be one of those squashes you have pushed your shopping cart by at the store and never even considered buying.
That’s why I want to spotlight acorn squash in today’s episode. They are a hidden gem in the squash world and many people don’t know just how nutritious they are…much less how to eat them. So listen in if you want to find out more about this fall vegetable!
